Easy Homemade Ice Cream

Sometimes you run across something and wonder how in the world you've survived this long without it. This is how I feel about this recipe.

Two main ingredients. No ice cream machine. No rock salt. Easy peasy! Make the basic recipe then add in whatever you want. Make it your own!

Basic Recipe:

2 cups heavy whipping cream (whipped until it stands in peaks)
1 can sweetened condensed milk (folded into the whipped cream)
vanilla extract

Freeze for six hours.

So far I've made...

Rocky Road (unsweetened cocoa powder and salted, roasted almonds added to the sweetened condensed milk then folded into whipped cream. I also added spoonfuls of marshmallow crème)

Salted Caramel (For this I used a flavor packet from Duncan Hines intended to flavor icing. I used caramel, of course, added to the sweetened condensed milk. Then added about 1/2 teaspoon of sea salt.)

Strawberry (Strawberry Duncan Hines flavor packet, mixed with sweetened condensed milk and fresh strawberries, cut up. I also added a few drops of red food coloring.)

Butter Pecan (Added 1 cup rough cut pecans that had been sautéed in butter, a little brown sugar and cinnamon. Let that cool, then folded into whipped cream/milk mixture.)

The possibilities are endless though.

How about peanut butter or nutella with choc chips added? or mint choc chip? Maybe cookie dough or birthday cake ice cream?

I know many of you have seen this on facebook already. But after a two month hiatus from blogging, I knew I would have to have something pretty spectacular to get me back to blogging. This is it!

Dauphin Island 2014

Back again to my beautiful Dauphin Island. I am at peace here. I love everything about it.

It's a bird. It's a plane. No, it's Kale-bo!

A special day today. Mamaw bought Kale a shirt with a superman cape. He loved it. LOVED it!



It made him walk different. He pumped his arms a little bigger, leaped a little longer and just generally was able to conquer evil with very little effort!

Of course, even Superman has to check to make sure his cape is still there. Wouldn't want to lose that, now would we?



And away we go.



You know it's not every day that I get to walk to town with a superhero!

My Summer Begins in Baton Rouge

Mom and I are spending a few days with Ben and Betsy while Diane and Sammie are in Chicago. So glad to be able to do this.

Rest for the Weary...a.k.a. Random Thoughts

School is almost done. Ready for summer.

Vacations are scheduled, including a trip to my beloved island. ahhhhhh

Walter is now a high-school graduate. Two down, one more to go.

Stress can be a killer. A joy-stealer. I don't like it.

Prayer works.

Kale hugs me and tells me, "you're da best, Mimi" My heart melts.

He also calls Sam, "his boy".

I think I'm going to buy a hammock for my camping trips.

I have a huge summer filing/reorganization project and am actually looking forward to it.

I remember as a kid being bored. Now I can't remember the last time I was bored. Of course, I used to hate naps too. Now, not so much.

Sidewalk Chalk with "my boy"

 

Kale is into drawing with sidewalk chalk lately. 

 

He even talked Sam into drawing some with him.  Kale loves Sam and calls him, "my boy".

 

The other day at preschool, Sam was there.  Kale introduced him to his friends.  He'd say, "this is Sammy (btw, he's the only one that can get away with calling him that) he's my uncle, he's my boy".

I love it!

Another thing Kale has learned to do is to fly down the hill on his trike.  He handles the stopping part very well.  It still makes Mimi nervous though.
